Step 1: For these delicious blueberry cupcakes, the first thing to do is gather all the ingredients, these are for 10 cupcakes
Step 2: Beat the butter and sugar until the butter is soft, you can do this with an electric mixer.
Step 3: Add the oil, vanilla essence, eggs and milk and continue beating.
Step 4: Finally mix in the flour together with the baking powder and then fold in the blueberries, mixing well.
Step 5: Place the mixture in the cupcakes molds (fill to two thirds, do not completely fill the mold) and bake for 25 minutes at 170 degrees.

Preparation (serves 8 People)
Step 1. Preheat oven to 180°C (moderate oven). Lightly grease a 28 x 18cm baking pan.
Step 2. Cover the bottom of the pan with the blueberries. Squeeze over with juice of half lemon.
Step 3. Batter: In a medium bowl beat the butter and sugar until creamy. Add the flour and the baking powder alternating with the milk, until a smooth mixture is obtained. The batter is quite liquid. Pour the batter over the blueberries and spread evenly.
Step 4. Topping: In a small bowl mix the sugar, salt and corn starch. Sprinkle over the top of the batter. Sprinkle with a little cinnamon and pour the boiling water over the mixture in the pan.
Step 5. Bake for 45 minutes in the preheated oven, or until golden brown.
